Ingredients:

  • 1 cup rice (any variety you prefer)
  • 2 cups vegetable broth or water
  • 2 cups mushrooms, sliced (such as button mushrooms or cremini)
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, sesame seeds, hot sauce

Instructions:

  1. Cook Rice: Rinse the rice under cold water until the water runs clear. In a pot, combine the rice and vegetable broth (or water). Bring to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is cooked and fluffy. Remove from heat and let it sit, covered, for a few minutes.

  2. Sauté Mushrooms: While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant, about 2-3 minutes. Add the sliced mushrooms to the skillet and cook until they are tender and golden brown, about 5-7 minutes.

  3. Season: Once the mushrooms are cooked, drizzle soy sauce and balsamic vinegar over them in the skillet. Stir well to coat the mushrooms evenly. Season with salt and pepper to taste.

  4. Assemble Bowls: Divide the cooked rice among serving bowls. Top each bowl with a generous portion of the sautéed mushrooms and onions.

  5. Garnish: Garnish the bowls with chopped green onions, sesame seeds, or a drizzle of hot sauce, if desired.
