Ingredients:

  • 9 lasagna noodles (whole wheat or gluten-free, if desired)
  • 2 cups marinara sauce
  • 1 cup vegan meat crumbles (such as soy-based or lentil-based)
  • 1 cup vegan ricotta cheese
  • 1 cup vegan mozzarella cheese, shredded
  • 1/4 cup nutritional yeast (optional, for added cheesy flavor)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).

  2. Cook Lasagna Noodles: Cook the lasagna noodles according to the package instructions until they are al dente. Drain and set aside.

  3. Prepare Filling: In a skillet, heat olive oil over medium heat. Add minced garlic and diced onion, and sauté until softened and fragrant, about 2-3 minutes. Add vegan meat crumbles to the skillet and cook until heated through, following the package instructions if necessary. Season with salt and pepper to taste.

  4. Layer Lasagna: Spread a thin layer of marinara sauce on the bottom of a 9x13-inch baking dish. Arrange 3 cooked lasagna noodles side by side over the sauce. Spread a layer of vegan ricotta cheese over the noodles, followed by a layer of the cooked vegan meat crumbles. Sprinkle with vegan mozzarella cheese and nutritional yeast, if using. Repeat the layers, finishing with a layer of marinara sauce and a sprinkle of vegan mozzarella cheese on top.

  5. Bake: Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the lasagna is hot and bubbly.
